Greens, pear, pecan and blue cheese salad

Makes 6 first-course servings. Can substitute any
favorite vinaigrette dressing.

For dressing, mix together:
3 Tbsp fresh lemon juice
1 Tbsp Dijon mustard
1 medium shallot, minced
1 1/2 tsp chopped fresh thyme
Whisk in 1/2 cup olive oil 

1 5-ounce bag mixed baby greens or Romaine lettuce
2 large ripe pears, halved, cored, thinly sliced lengthwise
1 cup crumbled blue cheese
1 cup Picante Pecans 

For a beautiful presentation, arrange pears around outside
edge of greens followed by a ring of blue cheese and top
off with the pecans in the center.
Mix with dressing to serve.
